Easy 7 Ingredient Vegan Bounty Bar Recipe

 

If you’re like us and you love all things coconut, this one’s a winner. This healthy version contains no refined sugars, and is sure to be your new fave. Treat yourself to a batch of these next time you’re craving something sweet. You can keep them in the fridge for up to 5 days.

INGREDIENTS

  • 50 grams desiccated coconut

  • 45 grams coconut flour

  • 100 ml coconut oil

  • 125 ml coconut cream

  • 100 ml maple syrup

  • 5 ml vanilla essence

  • 45 grams cacao powder

STEP 1

Place the desiccated coconut and coconut flour into your blender and blend on medium to high speed until the desiccated coconut has become finer.

STEP 2

Melt down 2 tablespoons of coconut oil, and add it into the blender along with the coconut cream, 3 tablespoons maple syrup, vanilla essence and a pinch of salt. Continue to blend through these ingredients. Taste the mixture and and ensure it is sweet enough for you and that the desiccated coconut is fine enough for your liking.

STEP 3

Lay down some baking paper on a plate. Using a tablespoon of the mixture at a time, gently roll into flat oval shapes, being sure to squeeze the mixture together so that your bars don't fall apart later. Place into your freezer whilst you prepare the chocolate!

STEP 4

Melt the other 3 tablespoons of coconut oil, and in a little bowl, combine this with the cacao powder and 2 tablespoons maple syrup. Mix together well until all is combined. Once the coconut bites have set in the freezer, place them in the chocolate mixture one at a time. Lift out with a fork and then place back onto the baking paper. Continue this with all of them. If your chocolate mixture hardens due to the cold coconut bites, place the little bowl in some warm water and it will remelt.

STEP 5

Place the plate back into the freezer, or if they have begun to harden already, in the fridge! These are best straight from the fridge once the chocolate has hardened, but can be stored in the freezer. We suggest that you let them thaw a little before eating.
